When the National Indian Gaming Association (NIGA) asked Centerplate, our exclusive in-house caterer, to prepare a menu of traditional Native American cuisine for their event, naturally, the answer was a resounding “yes!” Centerplate’s talented culinary experts are pros at customizing menus to the unique needs of our diverse clientele.
“Our client wanted a menu that was steeped in tradition and completely authentic, but with a contemporary flair,” said Jeff Leidy, executive chef at the San Diego Convention Center. “Our team researched over eight Native American tribes to come up with ideas and ingredients.”
Chef Jeff scoured the Internet for Indian folklore, indigenous ingredients and recipes. What he came up with was a delicious feast that included:
- Pan seared bison filet with a Bedre’ chocolate red mole sauce
- Buffalo and white Cheddar enchiladas
- A Three Sisters Salad, based on a Native American legend about why corn, beans, and squash are planted together.
The San Diego Convention Center hosted four Native American students and their instructor from the Navajo Technical College’s culinary arts program during the NIGA event. The students worked side by side with our food and beverage staff, prepping food in our kitchens.
“As a former culinary student, I can appreciate how important it is to gain experience,” said Leidy. “I really enjoyed the chance to give these outstanding students a taste of their future careers in the food service industry.” |

NIGA also played an important role in making sure Centerplate had all the specialty ingredients needed to create contemporary indigenous recipes. From rice to bison, and chilies to chocolate, many of the food items were generously donated by Native American vendors across the country.
“As experienced food professionals, we enjoy the challenge of creating specialty menus for our clients,” said Nancy Murgillo, director of food and beverage for Centerplate. “Our incredible staff has the experience and talent to make sure that all of our guests have a unique experience as well as the freshest and finest food around.” |
